I was grocery shopping in an Asian shop today and spent a fortune there as always. I love to go through the aisles of products searching for new stuff. I could have easily spent a whole day there. I bought a lot of veggies, miso, tempeh, tofu, noodles, palm sugar and curry pastes for the whole next year. When I came home, I was already starving to death, so I decided to make an easy and quick soup using all the groceries I bought. The soup is very flavorful yet light. You can use any noodles you have on hand, I opted for shirataki noodles. Now, run into the kitchen, grab your chopsticks and tuck into this bowl of pure happiness!

What to put into the bowl?
- 1 package noodles (about 250g.)
- 1 big carrot
- handful of broccoli florets
- few pak choi leaves
- handful of brown mushrooms
- handful of enoki mushrooms
- 1 package tofu
For the soup:
- thumb sized fresh ginger (ginger powder will be okay as well)
- 2 garlic cloves
- 1 small chili
- 2 bay leaves
- 1 lemon grass
- 1 Tbsp. coriander seeds
- 1 lime
- 3 Tbsp. red curry paste
- 1 tsp. sambal oelek
- few lovage leaves
- 5 Tbsp. soy sauce
- 2 Tbsp. miso paste (I used the white one)
- 3 Tbsp. mango powder (optional)
- 500ml. coconut milk
- about 400ml. water
- fresh coriander
Instructions:
- Prepare all veggies, which you wish to put into the bowl. Wash, peel, chop and pan fry them until they are slightly soft and bright colored. Set aside.
- Cut your tofu into cubes, pan fry them until golden brown and set aside.
- Cook your noodles following the instructions on the package and set aside.
- Now, heat few drops of coconut oil (or any oil of your choice) in a heavy bottomed pot. Fry the finely chopped ginger, chili and minced garlic together with bay leaves and coriander seeds for few minutes.
- Pour in the water and coconut milk.
- Add lemon grass, juice of 1 lime, red curry paste, soy sauce, miso, lovage leaves, sambal oelek and mango powder (if using) and bring to boil. Let it simmer for about 10-15min until all flavors are well combined.
- Put your noodles, veggies and tofu into a bowl, pour in the hot soup, garnish with fresh coriander leaves. Serve warm.
