Sweet Potatoes are the ultimate paragon of multitasking. They go with pretty much everything: you can add some to your salad, make muffins, cakes, pair them with coconut milk to cook a delicious soup, bake healthy fries, use them to make wonderful burger patties or just eat them plain with your fingers straight from your baking plate. Not that I know of. Just saying…. On top of that, these all-rounders are super yummy and satisfying with a well-earned reputation for nutrition. Even my dog goes crazy, when she smells them in the kitchen…Or maybe it´s her way to mimic my reaction, when I see these golden beauties on my plate. Anyway, their sweetness goes very well with the citrusy taste of the thick & creamy dressing and the crunch of roasted nuts and they can be made in a flash. Perfect weeknight meal!
I think I may be addicted to porridge. I could eat it for every meal every single day. It´s nourishing, warming, deliciously creamy, rich in fiber, budget friendly and keeps you full for hours. The best thing is that you can vary your toppings every day and transform this simple baby pulp into the most exquisite dessert in the world. And it totally allows you to have chocolate for breakfast and feel good about it. Which other meal provides that? You can always buy a ready-to-make mix or just blend plain oats and mix them with water or milk to prepare an easy and energizing breakfast in less than 5 minutes. But we want to take it to the next level…I once bought this ready-made oatmeal mix, which contained a lot of delicious ingredients besides the obvious oats and fell in love from the first bite. After buying kilograms of this stuff, I was very determined to make my own mixture. And the results became my favorite thing in the morning.
Don´t let the long list of ingredients scare you, once you have everything together it´s super easy and will last for many weeks.
I thought that the first blog post should live up to its blog name, therefore we have a lot of crunchy peanuts here! I made this cake for my mum´s birthday and to celebrate the official start of this blog and this cake definitely fulfilled the expectations. At the bottom we have a rich & dense brownie base, followed by fudgy truffle layer, topped with some light and airy peanut butter mousse and sprinkled with caramelized and salted peanuts. This cake won´t keep the calories on the light side, but it is chock full with healthy fats and doesn’t contain weird & artificial ingredients. It´s not overly sweet, the bitterness of dark chocolate is neutralized by the salty peanut butter mousse and it´s just the right and elegant dessert to serve on any occasion. When you´re a chocoholic like me and a fan of peanut butter you´ll love it from the very first bite! :)
