Crumbly scones

There is nothing better than the aroma of something freshly baked. The scones are very easy to make, light and fluffy and pretty adjustable – you can change the flavor with anything you want. I made them with orange zest and chopped brazil nuts and ate them plain with coffee. But I imagine that they would taste even better with whipped coconut or soy cream and a blob of jam. I used palm sugar as a sweetener so they´re not overly sweet, but feel free to adjust the amount to your preferring. They taste the best when still warm & fresh.

Ingredients:
  • 2 cups flour
  • ½ cup palm sugar (or any sweetener of your choice)
  • 2 tbs. baking powder
  • 1 tbs. baking soda
  • 1/3 cup coconut oil (softened)
  • ½ cup rice milk
  • pinch of salt

Instructions:
  1. Preheat your oven to 220°C and line a baking sheet with a parchment paper.
  2. Put all dry ingredients (flour, sugar, baking powder, baking soda, salt) into a large bowl and whisk until combined.
  3. Stir in the coconut oil and rice milk. Mix until a dough starts to come together. It should be easy to handle, not sticky.
  4. Flatten the dough on the baking sheet and form a round shape (like a pizza, but thicker).
  5. Cut the disk into 4 or 6 triangles and bake for 15min. until golden-brown.
