This rice dish is easy & quick to make, rich in proteins and very flavorful. Normally it has a risotto-like texture and gets very creamy when you let the rice sit for a while in the coconutty sauce. Unfortunately, I was so hungry that I didn´t care about the texture, so the photos don´t really reflect the creaminess, but when you´re able to be more patient than me, you´ll be rewarded with a tasty, creamy and filling rice meal!
I wrote down the amounts of veggies I found in my fridge, but feel free to adjust this to your own preferences. The recipe makes A LOT of rice, so if you wish to make a smaller amount cut the recipe in half. You can also add different veggies, tofu, tempeh etc. The ultimate comfort food!
